4. Floral Sheers: purchase special scissor only for flowers, the sharp ridges will ensure that the stems are not crushed. When using your every day, kitchen scissors you will damage the stems.

And if I wanted to also utilize a pedestal bowl as the centerpiece (as shown), how deep (at least) should it be?

We usually recommend arranging the day before your event. In some cases, you could arrange 2 days in advance but your chances of the flowers wilting are greater once you cut the stems short. If using a pedestal bowl I would definitely recommend using floral foam inside, this helps you create a nice full and lush arrangement in a small vessel, it’s much easier. I would say it should be at least 2 and a half inches deep to hold the weight of the flowers in the foam.
